Blue Borage Honey or Vipers Bugloss

Blue Borage Honey (borago officinalis) is collected mainly on the South Island of New Zealand. Blue Borage Honey has a very delicate floral bouquet with a pleasant, mild, herbal scent and tastes great in tea, on toast, scones, biscuits or in a BBQ Sauce! Blue Borage Honey has high fructose levels. Manuka Honey USA operated a honey store called "West Coast Honey Stop" on the Central Oregon Coast in Florence, Oregon for over 9 years. At that retail location we had a "Honey Tasting Bar" set up, so people could try over 30 varieties of honeys and mustards.

We noticed that the men were particularly attracted to the Blue Borage Honey. After finishing their tasting round, they would come back to the Blue Borage Honey one more time, to proclaim it their 'favorite honey'. A typical comment was "I swear, this is the best honey I've ever tasted - give me 2 bottles of this Blue Borage Honey to take home!"

Blue Borage Honey is also considered to be a type of medicinal honey to help relieve stress and fatigue, but is not as medicinal as manuka honey from New Zealand. Even though Blue Borage Honey is a creamed honey, the nectar can easily separate from the creamed honey to the point that it looks like 50% nectar and 50% solid honey mass. This separation of firm and liquid mass, happens in a fairly short time frame. There is nothing to worry about, just mix the honey well until it is smooth and creamy. You can store it in the refrigerator if you prefer the honey firmer.
