Questions about Active Manuka Honey?

What does UMF stand for?

UMF stands for "Unique Manuka Factor", and is the trademark for the special antibacterial property found in Manuka Honey. When honey is diluted, a special enzyme the bees have added produces hydrogen peroxide, a well known antibiotic. Manuka Honey has been found to have an antibacterial activity in addition to hydrogen peroxide. No one has so far discovered the substance involved, so it is called UMF.

What does the UMF Number mean?

The UMF number (e.g. UMF10+) is a standard way of describing the bacteria-destroying power of the product. The honey is put in a plate with a bacterial culture, and the area is measured where the bacterial growth is stopped. this area is compared to a similar area produced by a solution of phenol and water. The number refers to the percentage of phenol in the water. So UMF 10 is honey that has the same bacteria-killing power as 10% phenol.

What is so special about Active Manuka Honey?

Active Manuka Honey has a very powerful antibacterial activity. It can destroy staph aureus, even when it is diluted to only 1.8% honey concentration in water. It has also been shown to destroy antibiotic-resistant MRSA (Methicillin-Resistant Staph Auereus also called Golden Staph or "Super Bug" at 10% honey concentration.

What is the difference between Manuka Honey and Active Manuka Honey?

Regular Manuka Honey and Active Manuka Honey, are both collected from the flower of the Manuka bush (leptospermum scoparium) in New Zealand, and are sold in the US by Manuka Honey USA. Manuka Honey is less concentrated than Active Manuka Honey. Manuka Honey is used for sore throats, colds, canker sores, fever blisters, acne and pimples. Manuka Honey also tastes great on toast with peanut butter!

Active Manuka Honey is collected in an area where the Manuka bush is highly concentrated, and therefore produces are more concentrated honey. Dr. Molan from the Waikato University of New Zealand has been researching Manuka Honey for the past two decades and has classified various strengths of Manuka Honey.

UMF stands for 'Unique Manuka Factor' - the factor responsible for destroying staph aureus, streptococcus and h. pylori (helicobacter pylori), the bacteria believed to be the cause of stomach ulcers. Therefore the statement has been made that Active Manuka Honey may be the solution for stomach ulcers sufferers worldwide.
Active Manuka Honey is also used externally for burns (first degree burns, second degree burns and third degree burns, typically making skin grafting unnecessary), wounds, amputation stump wounds, ulcers, diabetic leg and foot ulcers, sores, fresh operational scars as a wound dressing.

Has Manuka Honey been researched?

The non-peroxide (UMF activity) in Manuka Honey has been described by Molan and Russell (1998) and Allen (1991). Non-peroxide antibacterial activity in honey is important for wound care uses, since the factor is not reduced by catalyses activity in tissues or blood (Cooper 1999).

Manuka Honey has been shown in laboratory studies to have antibacterial activity against the 7 most common species of bacteria found in wounds. 58 strains of Staphylococcus Aureus isolated from infected wounds showed complete inhibition at concentrations of 2-3% UMF Manuka Honey. The effect was caused by factors in addition to the sugar in the honey (Cooper 1999). Methicillin-resistant S. Auereus (MRSA) strains have also been tested against UMF activity, with complete inhibition shown at 10% honey concentration (Molan 1996).

UMF Manuka Honey also inhibits the growth of vancomycin-resistant Enterococci (VRE) at about half the concentration of clover honey with hydrogen peroxide activity (Allen 2000). Honey, including Manuka Honey, has shown the prevent the growth of Pseudomonas spp. found on the surface of a wound even if the honey was diluted 10 fold by exudation from the tissue (Cooper and Molan 1996).

In addition to the antimicrobial activity present in honey, honey enhances wound healing by a variety of other means. (Molan 1998/1999, Subrahmanyam 1991). These include
a) providing a moist, but sterile environment for tissue re-growth which enhances tissue formation and reduces tissue deformity,
b) eliminating tissue damage caused by the use of standard antibiotics,
c) the osmotic effect pulling up serum from the body into the wound,
d) the osmotic effect absorbing pus in the wound,
e) providing glucose used by white blood cells to create the 'respiratory burst' needed to destroy bacteria,
f) providing a pliable barrier between wound and dressing, which protects new re-growth tissue from being torn away when the dressing is changed
g) providing acidification of the wound, which has been shown to stimulate healing, by creating an anti-inflammatory effect through the reduction in the number of inflammatory cells in wound tissue (honey has antioxidant properties) providing wound bacteria with nutrients instead of amino acids, thus encouraging the bacteria to produce lactic acid instead of ammonia (the chemical associated with odor in skin ulcers).

Molan (1998) has carried out comprehensive review of case studies, animal studies and randomized clinical trials, where honey was used to treat wounds, burns and skin ulcers. Dunford (2000) has presented case studies describing the use of UMF Manuka Honey in the treatment of wound and chronically infected lesions, including a case where massive skin lesions and necrosis resulting from meningococcal septicemia not responding to conventional treatment, healed completely within 10 weeks of the start of Manuka Honey treatment (Dunford 2000)

Researchers attending the First World Wound Healing Congress in Melbourne,  Australia, learned that honey has outperformed conventional antibiotics in treating  burns and infected caesarean sections. Honey can eradicate Salmonella, E. Coli and Helicobacter pylori and even kill antibiotic-resistant bacteria including the hospital superbug MRSA. Not all types of honey work though. The most effective ones are manuka honey from New Zealand and jelly bush honey from Australia. It is believed that these varieties release hydrogen peroxide, which is deadly to microbes. Can Honey be used on Burns and Wounds?

Honey is one of the best treatments available for burns and wounds because it provides a moist, sterile environment for tissue re-growth. It also makes a soft barrier between the wound and the dressing that protects new tissue from being torn away when the dressing is changed. How should honey be applied to a Wound?

Because honey is sticky and the wound will cause the honey to run, it is best to apply a teaspoon or tablespoon (depending on the size and depth of the wound) to a sterile gauze, then apply the gauze with the honey to the wound. Change the dressing every 24 hours.

What does Manuka Honey feel like on a wound?

Most of the time the honey feels very soothing when covering a wound. However sometimes you may feel a slight stinging or burning sensation which is caused by the high acidity of the honey. For most people this sensation will subside  in 5-10 minutes. However, if the burning and stinging sensation remains or even gets stronger. If that occurs, the honey must be removed from the wound and the wound washed with warm water. In this case, apply Regular Manuka Honey to the wound which will still be beneficial in the wound healing process.

Can I use manuka honey as a wound dressing, or for burns?

Yes, you can. Take a sterile gauze and apply the Active Manuka Honey to the sterile gauze. Then apply the gauze with the honey to the burn, change the honey wound dressing every 24 hours.

What is Honey?

The raw material for honey is nectar from flowers. Honey bees collect this nectar, bring it back to the hive, and make it into honey. The bees change the chemical structure of the nectar, and also fan warm air to reduce the moisture content of the nectar from as much as 60% to 20% or even less. The honey has such low moisture content that it actually attracts humidity like a sponge, and in the hive the honey bees put a wax capping over the full cells of honey to help preserve it.

Is Honey the same as Sugar?

If by "sugar" we mean white table sugar, the answer is NO. Table sugar is sucrose, a substance made up of two molecules attached together. When we eat table sugar, our stomach has to use its own enzymes to separate the molecules apart before we can use the sugar's energy. Honey is quite different. the bees have added a special enzyme to the nectar that separates the sucrose into glucose and fructose, two simple sugars that our bodies can directly absorb. In effect, the bees have already "pre-digested" the sugar in honey for us, so it is an instant source of food energy.

Can Diabetics use Honey?

Clinical studies have shown that honey is a better choice for diabetics than sugar. Honey has lower required insulin levels compared to other sugars and produces lower rises in blood sugar due to the fructose it contains. However, diabetics should always consult their doctor before including honey in their diet.

Why are babies and children 1 1/2 years and younger NOT allowed to have honey?

Some pediatricians recommend that honey should not be fed to babies and children under the age of 1 1/2 years, because of the possibility that Clostridium Botulinum spores (the cause of infant botulism) could be present in honey. Spores of this bacteria do not germinate in the acidic adult digestive system, but may grow in the gut of young infants, because they do not have a well-developed intestinal system. However, cases of infant botulism are extremely rare, and spores of the disease are present in the soil and in a range of common foods, especially raw foods.

It is important that pasteurized honey not be given to children 1 1/2 years and younger. Pasteurized Honey is a known source of bacterial spores, that produce a toxin which can cause infant botulism. It is rare, but this serious form of food poisoning will affect the nervous system of babies and can result in death!

Can Honey spoil?

Pure, raw, natural, un-pasteurized Honey is the only food without and expiration date! One reason honey is called a "miracle food" is because in its natural form it is fully preserved. No organisms can live in it and the product will not decompose. However, if the moisture content is raised above 20%, yeasts can begin to grow and cause fermentation. Honey can also change texture, color and taste over time, and separate out into solids (glucose) and liquids (fructose and moisture). Stirring the product will mix up the components and return it to its former granulated state. Honey was found in a Greek Tomb that was 3000 years old. The honey was crystallized and hard, but when melted, still eatable!

How should I store Honey?

Store honey at room temperature. Refrigeration speeds up crystallization. If honey crystallizes, remove lid and place jar in warm water. How nutritious is Honey?

Common table sugar is 99% sucrose. Honey, on the other hand, is composed of glucose, fructose and vitamins, minerals, enzymes, antioxidants and oligosaccharides. Although relatively low in nutrients compared to some other foods, honey contains more nutrients than table sugar. The major nutritional benefits of honey is as a concentrated source of energy with 100g of honey providing 304 Kcal, or 10.9% of the USDA Recommended Daily Intake (RDI). For nutrients, the highest level in honey is iron, at up to 18% RDI, followed by vitamin B6 (up to 16%), phosphorus (up to 6%), copper (up to 5%), vitamin C (up to 5%), vitamin B2 (up to 3.5%), zinc (up to 3.3%, magnesium (3.2%) and calcium (up to 3%).

Does Honey have other nutritional benefits?

Honey has shown to help the body absorb both calcium and magnesium. This can be especially important for people (e.g. women, Asians) who have problems getting enough of these nutrients from their diet. The best way to get this benefit, is to take a tablespoon of honey in milk every day. The calcium and magnesium will be provided by the milk.

How can I substitute sugar with honey in recipes?

You can substitute honey for equal amounts of sugar in many recipes. In baked goods, substitute honey for up to half the amount of sugar and make the following adjustments. Reduce the amount of liquid in the recipe by 1/4 cup for each cup of honey used Add 1/2 tsp. baking soda for each cup of honey used. Reduce oven temperature by 25F (because honey will brown baking goods more than sugar). What are Oligosaccharides?

Oligosaccharide are special sugars found in some foods that encourage the beneficial bifido and lactic acid bacteria in our stomachs. Oligosaccharides are known as "prebiotics" because they stimulate the bacteria to carry out their important work aiding our digestion. Some honeys (especially honeydew) contain significant levels of "oligosaccharides".

What is pasteurized Honey?

Granulation or crystallization (the growth of glucose crystals) is a natural process in all honey. Darker honey seem to crystallize faster than lighter colored honey. In grocery stores you will find most likely liquid honey that has been heated to very high temperatures (to kill yeast spores), filtered very fine (to remove starter crystals), and even had its moisture level increased artificially. The honey may look like it has just come out of the hive, but in reality it has been highly processed. The ONLY advantage of this type of processed, pasteurized honey, is that is does not crystallize for a long time while waiting for a customer on the store shelf.

How do you produce Honey from different floral sources?

There are over 450 plants in the world that produce surplus nectar, and the honey that bees produce from each species has remarkable differences in color, taste and smell. Luckily, different plant species tend to flower at different times of the year. Also, beekeepers place their hives in the middle of a mostly one plant species floral source that is blooming during a particular season for the 'honey flow'. After the 'honey flow' of one floral source has been collected, the beekeepers moves his hives to another floral source and collects a honey of a different floral source.

What is Raw Honey?

Raw honey is honey that has not been over-heated or over-strained. Excess heating, such as used to produce liquid honey, destroys the natural enzymes that the bees have added, including the substance producing hydrogen peroxide that gives honey part of its antibacterial activity
