Gluten-Free Manuka Honey Cake
For those who find themselves with gluten sensitivities, you no longer have to be denied the sweet taste of honey cake! With this Gluten-Free Manuka Honey Cake, anyone has the chance to try the sweet and spicy blend of flavor with the right dash of Manuka honey, all thanks to the life-saving Sydney Blend flour or another similar gluten-free flour. While Rosh Hashanah has come and past this year, this recipe is perfect for those of the Jewish faith who also suffer from celiac disease or a similar condition, so this is definitely one to keep on the books for next year’s holiday season.

Ingredients for Gluten-Free Manuka Honey Cake
2 ½ cups gluten-free flour, more for the pan
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ½ teaspoons cinnamon
1 teaspoon ground ginger
3 large eggs
1 cup granulated sugar
1 ¼ cups olive oil or canola oil
1 cup plus 2 tablespoons Manuka honey
¾ cup dry red wine
2 teaspoons grated orange peel or orange zest
Directions for Gluten-Free Manuka Honey Cake
- Pre-heat the oven to 350 degrees.
- Generously grease and flour a ten-inch bundt pan with the gluten-free flour (Sydney Blend, for example) including the center tube (since no one wants their awesome cake sticking to the pan after it bakes!). A cooking spray with flour won’t do since that flour is likely not gluten-free.
- In a large bowl, whisk together the dry ingredients: gluten-free flour, baking powder, baking soda, salt, and the spices.
- In another large bowl, whisk together eggs, sugar, oil, Manuka honey, the wine, and the orange zest until it is all well combined. Gradually add dry ingredients to the wet ingredients and whisk together until the batter is smooth with no lumps.
- Pour batter into pan and bake until springy to the touch and a toothpick comes out of the center clean, which takes about 50-60 minutes. Every oven is different, so make sure to check the cake before removing it from the oven if yours has stronger or weaker heat settings.
- Transfer pan to a wire rack to cool for about 20 minutes, and then unmold the cake and let cool completely.
- Serve honey cake topped with powdered sugar. One thing to note is that this Manuka honey cake pairs very well with macerated stone fruit and whipped cream.
