Raw Honey Summer Salad Recipe

When it comes to summer recipes, we want to try to keep them fast and light. This summer salad is a great way to enjoy the incredible flavor of raw honey without actually packing on the calories. It will only take a few minutes to make and they will be minutes well spent, as your guests will be smacking their lips looking for more when they take the last forkful, this we assure you. If you are using Manuka honey, you may be best served to slightly warm the honey before making the recipe to ensure it combines well with the other ingredients.
Ingredients:
- 2T extra-virgin avocado oil
- 1 1/2T raw honey
- 1/2t grated orange rind
- 1T fresh orange juice
- 1T fresh lime juice
- 1t whole-grain mustard
- 1/4t kosher salt
- 12oz cubed watermelon
- 12oz cubed honeydew
- 1c cucumber, cut lengthwise into thin ribbons (about 1 cup)
- 1/2c thinly sliced red onion
- 3T torn mint leave
To Make:
- Add first seven ingredients to large mixing bowl
- Stir lightly with whisk until well-combined
- Add in cucumber, melon, and onion
- Toss all ingredients until fruit and inion are well coated
- Cover and allow to sit rest for about 15 minutes at room temperature
- Prior to serving, sprinkle fresh mint on top of mixture, then serve
Just like we said, quick and easy! This will work with great as a side dish during a BBQ or can even be used as a light meal on a hot summer day.
