A Delicious Dessert Recipe Combining Vanilla and Honey

Many people use honey as a means to naturally sweeten some of their favorite foods. Honey is often used as a spread for toast, biscuits, and scones as well as a substitute for sugar in many dessert recipes. Pudding is a favorite after dinner treat that a lot of people enjoy and while chocolate, vanilla, and butterscotch are some of the most popular flavors honey is not one we often think of. Next time you are craving something sweet without all the sugar, try this blue borage honey and vanilla pudding recipe.

Blue Borage Vanilla Pudding Ingredients

  • 2 cups whole milk
  • 1 cup heavy cream or whipping cream
  • (2) 4 to 6 inch vanilla beans (substitute 2 teaspoons vanilla extract)
  • 3 egg yolks
  • ½ cup white sugar
  • ¼ cup Blue Borage honey
  • 3 tbsp. cornstarch
  • 1/8 tsp. salt
  • 1 tbsp. unsalted butter
  • Fresh fruit (for garnish)
  • Whipped cream (for garnish)

Directions for Blue Borage Vanilla Pudding

  1. In a medium saucepan over medium heat, bring milk to a boil, stirring occasionally. Remove from heat.
  2. Using the tip of a paring knife, split the vanilla beans down the center and remove the seeds using a scraping motion. Add the vanilla beans and empty pods to the hot milk and stir until well combined.
  3. Allow the milk to cool to room temperature for about 15 minutes. Cover the saucepan and chill in the refrigerator for 2 to 24 hours.
  4. Remove the saucepan from the refrigerator and remove the vanilla pods from the milk mixture. Squeeze the pods over the milk mixture to extract any remaining seeds and discard the pods when done.
  5. Reheat the milk in the same saucepan adding 1 cup of whipping cream. Heat over medium heat until the mixture begins to boil. Remove saucepan from the heat.
  6. In a medium sized bowl, beat egg yolks for 1 minute using an electric mixer on medium speed. Add sugar, Blue Borage honey, cornstarch, and salt and continue to beat until well combined. Gradually beat in 1 cup of the heated milk mixture until well incorporated.
  7. Add the beaten egg yolk mixture to the remaining hot milk mixture in the saucepan. Bring the new mixture to a low boil over medium heat. Reduce heat and cook for an additional two minutes. Remove from heat and add butter and stir until melted. Strain the mixture if necessary to remove any lumps.
  8. Pour the pudding mixture into individual dessert dishes or a large serving dish. Cover dish or dishes with plastic wrap and chill for between 1 and 3 hours until the pudding is set.
  9. Serve pudding with fresh fruit and whip cream and enjoy!
